FISH AND SOTANGHON SPRING ROLLS

Since I don’t want to eat meat for our dinner because I have to reduce my weight. I cooked fish for our dinner.

INGREDIENTS:

Oil

Garlic (minced)

Onion (finely chopped)

Tinapa (dried fish) (flaked)

Carrots (minced)

Sotanghon (glass-like noodles) (pre-cut and soaked until tender)
Lumpia wrapper

Procedure:

1. In a skillet, heat 1-tablespoon oil.

2. Sauté 1 minced garlic, 1 finely chopped onion, 1 cup flaked tinapa, ¼ cup minced carrots.

3. Add 1 cup of sotanghon. Cool. Wrap in lumpia wrappers and deep-fry in hot oil until golden brown. Drain.

I enjoyed the dinner but my dad didn’t because he was expecting me to cook a meat dish. Heheheh!
